Rioja Pork Chops Recipe
INGREDIENTS:

2 tbsps olive oil

4 loin pork chops about 1″ thick

1 chopped medium onion

1 minced clove garlic
-
3 homemade pimientos cut in strips

2 chopped tomatoes
-
Salt and pepper
PREPARATION:

Heat the oil in a large, shallow casserole and brown the chops quickly

Add the onion and garlic, and cook until the onion is wilted
-
Add the pimientos, tomato, salt and pepper to the pork chops
-
Cover and simmer for about 20 minutes until the chops are cooked through
Homemade pimientos:Place red bell peppers in a roasting pan and bake at 350 degrees Fahrenheit (175 degrees Celsius) for 30 minutes, turning occasionally until blackened on all sides
Peel off the skin and remove the seeds
A trick to easy peeling: put the red bell peppers in a closed paper bag for 10 minutes before peeling
