Apricot-Banana No Bake cookie recipe
The Apricot-Banana no bake cookie recipe produces delicious treats loaded with fiber and beta-carotene.

So, how to make this no bake cookie recipe:
Ingredients:
- Honey 1 Tbsp
- Water 2/3 cup
- Fresh lemon juice 2 Tbsps
- 2¼ cups coarsely chopped Bananas
- Dried apricots, coarsely chopped 2¼ cups
- 1/3 cup butter cut into small cubes
- Light brown sugar
- 1¼ cups Corn flakes
Directions:
- Spray an 8-inch baking pan with non-stick spray and set aside
- Take the lemon juice, honey, water, dried apricots and bananas into a saucepan and bring to a boil over medium heat
- Simmer over low heat until the fruits are softened (about 25 - 30 minutes)
- Remove from heat, set aside to cool
- In another saucepan, melt butter with brown sugar over low heat until the sugar dissolves completely
- Add the corn flakes to the melted butter saucepan
- Once the corn flakes and butter are mixed, firmly press half of this corn flake mixture into the prepared pan, smooth it and even it out
- Spoon the cooled apricot-banana mixture over it, and cover with the remaining of the corn flake mixture
- Cool completely before cutting into shapes
This no bake cookie recipe yields about 20 cookies (2″ x 2″ each)
