Kahlúa Chocolate No Bake Cookie Recipe

Ingredients:
  • 1 cup semi-sweet chocolate chips
  • 1 can evaporated milk (5 ounces)
  • 1 1/4 cups vanilla cookie crumbs
  • 1 1/4 cups ginger snap cookie crumbs
  • 1/2 cup confectioners’ sugar
  • 1/2 cup finely chopped walnuts
  • 1/3 cup Kahlúa liqueur
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut
Directions:
  1. Melt the chocolate chips in evaporated milk in saucepan over low heat; stir constantly until well blended
  2. Remove from the heat and set aside to cool for about 30 minutes
  3. Combine all the remaining ingredients except the coconut; stir into the chocolate mixture, blending well
  4. Shape the mixture into 1inch balls (if the dough is too moist, add up to another 1/3 cup of cookie crumbs)
  5. Roll each ball in coconut
  6. Drop onto wax paper or tray using table spoons
  7. Let air-dry for 2 hours then store in refrigerator
